This year, Chef Konstantin Netsvetaev and Executive Pastry Chef Igor Melnikov explore metamorphoses — of ingredients, techniques, the industry, and the guest experience. Together, they reflect on how culinary craftsmanship has evolved over the past two decades.
Chef Netsvetaev presents more than just a tasting menu — it’s a life philosophy expressed through, quite unexpectedly, wheat. A humble ingredient, perhaps, yet the very first grain ever cultivated by humankind.
Once it reshaped the course of culinary history, and even today it continues to reveal new facets of flavor and texture. Each course reinterprets wheat through creative techniques, showcasing its relevance and adaptability. The experience is enhanced by house-made vinegars and sauces crafted from fermented fruits.
