
Mediterranean flavors, contemporary presentation, and seamless team collaboration – the new menu at Quadrum, the signature restaurant of Four Seasons Hotel Moscow, embodies the culinary philosophy of Executive Chef Gennaro Conte, native of the sunny island of Ischia.
Each dish tells a story, developed in close collaboration with Konstantin Netsvetaev, the Head Chef of Quadrum. Together, they have adorned the classics with a touch of intrigue.
Start with an expanded antipasti selection, featuring three versions of focaccetta – a modern interpretation of the traditional Italian pastry. The most surprising? A rich, smoked scamorza sauce paired with pear mostarda and delicate almond petals.
A highlight among the starters is the beef carpaccio, complemented by crispy Parmesan flatbread reminiscent of Sardinian pane carasau. Finished with a briny olive dressing, the dish strikes a perfect balance of flavor and finesse.
Chef Gennaro Conte’s nostalgic roots shine through in the sfogliatella with Kamchatka crab, wrapped in tender celery root – a dish inspired by his grandmother and reimagined with a Russian twist. Italian in concept, yet uniquely local in execution.
For mains, the risotto with broccoli is elevated by spicy ’nduja sausage from Calabria and brightened with fresh lemon zest.
A seasonal standout is the Black Angus tenderloin, served with a delicate chamomile-infused sauce that lingers softly on the palate, evoking the essence of summer.
All of this, against the breathtaking backdrop of the Kremlin, Iberian Gate, Historical Museum, and Manege Square, makes for a truly unforgettable dining experience.
