August brings a vibrant palette of golden hues to Silk Lounge and the summer terrace of Moskovsky Bar. The seasonal menu celebrates the best of midsummer with dishes featuring chanterelles, zucchini blossoms, as well as apricots, crab, and scallops. Sous Chef Maksim Shornikov has curated a selection where flavor and aroma play in seamless harmony.
To start, choose a beef tartare with chanterelles, subtly spiced sun-dried tomatoes, and a light parmesan espuma; or opt for a striking salad of zucchini flowers, creamy goat cheese, fermented apricots, and almonds.
A refined take on a classic: the chef’s version of julienne features chanterelles and Sakhalin scallops, served with dark rye bread that perfectly complements the dish.
The standout of the season is set to be zucchini blossoms in delicate tempura, stuffed with Kamchatka crab and paired with sweet corn purée — a true highlight of the summer menu.
