
On Thursday, October 24, at 7:00 PM, the Quadrum restaurant at the Four Seasons Hotel Moscow will host a special guest, Emanuele Mongillo, the chef of the Italian restaurant Balzi Rossi. Together with Konstantin Netsvetaev, they will prepare an exquisite eight-course gastronomic dinner.
The evening will begin with a welcome glass of champagne, followed by an amuse-bouche from the Quadrum chef, Konstantin Netsvetaev. The cold appetizers will delight guests with refined flavors, featuring stracciatella with red shrimp sashimi and a tomato tarte Tatin with shellfish. The hot dishes promise to be a true gastronomic revelation: foie gras ravioli, shrimp tartare with a hint of cocoa, and delicate risotto with green peas and dried trout. For the main course, guests can choose between two magnificent options: veal shank, slow-cooked for ten days, served with sweet and sour peppers and pumpkin cream, or wild sea bass with smoked kale, baby carrots, and a fish jus. The perfect sweet ending to this unforgettable evening will be a Neapolitan rum baba crafted by chef Emanuele Mongillo.
Throughout the dinner, guests will enjoy live music – a trio of harp, cello, and violin will perform covers of modern compositions.
