The Most Feminine Day of the Year, March 8, Quadrum invites you to celebrate through taste and scent. Led by Chef Konstantin Netsvetaev, our culinary team has crafted an exclusive tasting menu inspired by the art of perfume. Just like a refined fragrance, the dinner unfolds gradually – from delicate top notes to a rich heart and a warm, unforgettable finish.
Each of the five courses is paired with its own signature aroma, enhancing the sensory journey:
Top Notes: Elderflower
Start with stracciatella, amaebi shrimp, strawberries, citrus, and fennel – a light, refreshing introduction, like the first gentle breeze of March. The sweetness of strawberries and the bright zest of citrus are beautifully elevated by a whisper of elderflower.
Heart Notes: Bird Cherry
Foie gras with bird cherry, fig, and balsamic vinegar reveals a lush, velvety depth. The aroma of bird cherry accentuates the berry tones and adds complexity to the composition.
Floral Note: Jasmine
Champagne risotto with goat cheese is creamy, delicate, and elegantly fresh. Jasmine aroma accompanies the dish, lending it grace and lightness.
Base Notes: Yogurt or Truffle
Guests may choose between two refined options: lamb with goat milk yogurt, harmonizing with the gentle, creamy scent of yogurt; or black cod with cauliflower, enriched by the noble aroma of truffle. These courses form the character of the evening’s gastronomic “perfume.”
Final Trail: Star Anise
Coconut-lime ice cream with citrus snow and coconut cream by Executive Pastry Chef Igor Melnikov closes the evening like early spring sunshine. The aroma of star anise adds a subtle spice, leaving a delicate, lingering finish.
The celebratory tasting menu is 12,500 RUB per guest, including a welcome glass of Prosecco. Advance reservation and prepayment are required.
