The Quadrum Restaurant at Four Seasons Hotel Moscow presents its seasonal al fresco version: the panoramic terrace becomes the scene for authentic Southern Italian dishes, while the wine list includes Italian and Russian highlights from the hotel's extensive collection. The head of the new culinary repertoire is the artistic chef Angelo Santi. In the foreground, guests can enjoy an unparalleled panoramic view of the Kremlin and Alexander Gardens.

From light snacks - homemade meze with golden bread, scallop carpaccio with tomato water and sea bass ceviche with carrot citronette and grapefruit - Chef suggests to taste positions rich with seasonal flavours: burrata with grilled anchovies and peppers or octopus with smoked potatoes and black garlic.

The undisputed leaders among pasta are caccio e pepe with clams and nettle gnocchi with red shrimps. Rabbit Ligurian style with taggiasca olives and chicken liver pate or sea bass with black couscous, saffron and peanut cream can compete to become the main course favourites. The names of homemade pizza selection sound like a music: mortadella, basilico, capocollo, pere e zola...

Angelo Santi's passion for music is expressed not only through the menu lines, but also in the accompanying playlist. All guests can point the screens of their smartphones to the QR codes, and the selected dish is set to perform its own melody - each personally composed and recorded in the studio by the Chef.

Quadrum Terrace welcomes guests daily from 12 noon to 2 am. DJ performances are scheduled from Thursday to Saturday from 20:00 to 00:00 and lazy breakfasts with DJ sets on weekends from 12:00 noon to 4:00 pm.

Pastry Chef and master chocolatier Igor Melnikov focuses on iconic recipes and infuses them with his innovative touch. In his hands, the classic frangipane becomes a fantasy flower with almond cream and red berry sauce, while nostalgic eskimo is filled with gelato, making it a perfect dessert for holidays in both Rome and Moscow.
