Prized for their rich aroma and velvety texture, chanterelles take center stage in a fresh salad balanced with the subtle sweetness of cherries, as well as in a light, flaky vol-au-vent filled with a creamy chanterelle fricassée. Both dishes are perfect for a leisurely lunch or an elegant dinner on the summer terrace.
The zucchini blossoms are presented in two distinctive interpretations: Neapolitan-style with sautéed baby squid, and delicately stuffed with ricotta and Taleggio cheese, served with a bright lemon sauce and capers. Light, vibrant, and unmistakably summery, each dish offers its own seasonal expression.
