As the Mid-Autumn Festival – one of China’s most cherished celebrations – approaches, Four Seasons Hotel Moscow becomes a meeting place for two culinary cultures. From 14 to 18 September, the hotel welcomed Billy Xu, Pastry Chef at Atlantis Sanya, who joined forces with Executive Pastry Chef Igor Melnikov to share the story of the festival with guests through flavour, form and the artistry of chocolate.
At the heart of the collaboration is the mooncake, the cherished symbol of the Mid-Autumn Festival that has brought families together around the table for centuries. The pastry chefs have created a contemporary interpretation of this traditional dessert for the display at Silk Lounge. At its centre is a rich chocolate and nut filling with candied fruit, enveloped in delicate cream mousse. While its familiar form preserves the authentic character of the mooncake, an interplay of textures offers a fresh perspective on the classic. Golden drops of honey, arranged in an elegant pattern, add a final festive touch.
For Quadrum, the chefs have created a dessert inspired by the light tropical character of Sanya. Whipped vanilla ganache with mango and passion fruit, coconut ice cream and lemon-lime granite come together in a delicate balance of flavours and textures, where creamy richness gives way to vibrant fruit acidity and refreshing citrus notes. The refined composition brings together the exotic spirit of a southern resort and the distinctive gastronomic character of Moscow.
The exclusive desserts will be available at the hotel’s restaurants from 25 September.
